Salty mineral notes followed by delicate suggestions of fruit reminiscent of overripe grapes, a little bread crust, stone fruit and orange zest; the “crisp coolness” with a hint of mint leaves is also detectable; everything is highly focused and impresses with clarity and finesse.

Hand-picked, gentle pressing and processing, temperature-controlled fermentation in stainless steel tank, aging on fine yeast. Matured in large oak barrels.
